Cucumber Mojito #Green #Juice

When I got asked to come up with something for Williams-Sonoma's Juice week, I thought....hmmm, nothing says summer like a Mojito!  And boy do I loves me a good mojito!  But, I don't always care for the feeling the next morning.  So I've made it my mission to come up with a delicious substitute that can be served with or without the rum.  And it may even be kinda good for you....but shhh...don't tell anyone!
Cucumber Mojito
What You Need:
2 Whole Cucumbers
1 Apple
2 limes
A couple sprigs of fresh Mint

What To Do:
Wash all your ingredients thoroughly. The only thing you'll need to peel is the lime, but make sure to leave some of the pith on.  Chop all your fruits and veg including mint and toss into your juicer and juice away.  I have an Omega J8006 Nutrition Centre juicer that will juice just about anything, peels, cores and all, so I just chop and drop it in!

When you're done, mix thoroughly and add a sprig of mint and enjoy! Or maybe a splash of rum to make it authentic!

Well, you can make a big batch of Cucumber Mojitos and serve it to friends at your next BBQ as it will keep in the fridge for a day or two.  Plus, you can brag about how you're getting your vitamins while having a cocktail!  This green juice even passed my husband's taste test; his comment: "Just needs some rum!"

So don't be afraid to try new combinations in your juicer, you might just be surprised what you come up with! And yes, green juice can be good for you AND taste yummy too!
