2 Minute Guacamole #Glutenfree #Vegan

I love Avocados.  But I always have problems achieving that perfect ripeness.  I either buy them too ripe and they go bad before I get to use them or I buy them so unripe that I totally forget I have them by the time they are good to eat.

And today was no different in my avocado timing.  I really wanted to eat those lovely green goodies, but when I cut into them they were too ripe...again. But luckily they only had a couple bad spots that I could cut off.  So when life gives you lemons....or overripe Avocados...make GUAC!  So here it is, possibly the easiest & quickest Guacamole recipe and the perfect way to use up a nearly spoiled Avocado or two.
2 Minute Guacamole


1 (or 2) uber ripe Avocados ( by the time I cut off the bad spots I had about 1.5 Avocados)
Couple Sprigs of Fresh Cilantro
1 thin slice of Onion (or more if desired)
1-2 tbsp Lemon Juice
Salt & Pepper to taste


Peel your Avocado and place in a bowl.  Add your cilantro and chopped onion, lemon juice and salt and pepper.  Grab your immersion blender (or throw all ingredients into a blender) and pulse a few times until smooth.  And that's it! Fresh delicious Guacamole.  You can add some chili flakes for a little kick or some diced tomato.  But even on it's own it's super yummy!

 Skip the pricey grocery store Guac and whip some up in just minutes.  It's perfect with crackers or tortillas, a dip for veggies, on a wrap or salad or on your baked potato!  It's just that simple.
