Sweet Ginger Sunshine Juice #recipe #juice

November blahs?  Dreary dark days getting you down.  How about a nice cup of Sunshine to perk you up?!

Sweet Ginger Sunshine Juice

2 large carrots
3 medium golden beets
4 clementines
1 apple
1 inch of ginger
1/2 pear - optional (I added this as the toddler didn't want to finish her snack)

Wash, peel and chop all your produce and get juicing! Start with the clementines, pear and apple and alternate with chunks of beet and carrot.  The harder veggies will help ensure all your soft juice fruits get through the juicer.

Pour into a jar, shake and enjoy! This recipe makes close to a litre of juice - enough for the whole family.  It's sweet and velvety with just a bit of ginger kick.

Now this golden goodness may look like Tang, but I can assure you it's infinitely better!  It's packed full of Vitamin C, Vitamin A, Beta Carotene and lots of other fabulous nutrients.  And the colour....oh you can't help but smile when you see that jar of sunshine in your fridge.  Sweet Ginger Sunshine is the perfect morning pick-me-up and it's also a great winter immune booster!
